S’Escalinata
At first glance this is just a few bean bags scattered across some stone steps on the outskirts of the 18thcentury castle in Ibiza town, but we discovered it has a lot more to offer. With a range of classic cocktails and tasty fresh fruit Mojitos, they also have a selection of special inhouse drinks. The Sake Mule features ginger beer, elderflower syrup and Sake sourced straight from Japan, and the Ron Cooler has a special blend of angostura bitters handmade in the bar. There are plenty more to choose from, and the bar is open until 3am so you have plenty of time to sample a few.
